定義：　本品は、脂肪酸とグリセリンのエステル及び誘導体である。この項目に含まれるものは次のとおり。
グリセリン脂肪酸エステルGlycerin fatty acid esters Mono- and di- glycerides of fatty acids (INS 471)
グリセリンクエン酸脂肪酸エステルCitric and fatty acid esters of glycerol (INS 472c)
グリセリン乳酸脂肪酸エステルLactic and fatty acid esters of glycerol (INS 472b)
グリセリン酢酸エステルGlycerol acetic acid ester
グリセリン酢酸脂肪酸エステルAcetic and fatty acid esters of glycerol (INS 472a)
モノグリセリンコハク酸エステルSuccinylated monoglycerides (INS 472g)
性状：　無色～褐色の粉末、薄片、粒、塊、半流動体または液体で、においがないか、特徴的なにおいがある。
確認試験：　合格
酸価：　グリセリン脂肪酸エステル、グリセリン酢酸エステル、グリセリン乳酸脂肪酸エステル、グリセリン酢酸エステル　6.0以下
グリセリンクエン酸脂肪酸エステル　100以下
モノグリセリンコハク酸エステル　60～120.
ヒ素：　4.0 ppm以下
鉛：　2.0 ppm以下
カドミウム：　1.0 ppm
水銀：　1.0 ppm
ポリオキシエチレン：　合格
強熱残分：　0.5%以下
